Abstract
The paper analyses the discipline relating to the traceability and tracking of olive oil in the Union, national and Sicilian dimensions. The subject of the investigation are both the rules that are more strictly inherent to product safety and the identification of the so-called responsible subjects, and the discipline of the information to be indicated (mandatory or voluntary) on the label that, in the olive-oil sector, requires the fulfillment of specific in- formation obligations with particular regard to the marketing of virgin and extra virgin olive oil
