Abstract
This article offers a semiotic analysis of culinary tradition, challenging essentialist views and the myth of pure origins in food heritage. Drawing on structuralist critiques of authorship and enunciative praxis theory, it reinterprets tradition as a dynamic process of reiteration and cultural negotiation. The manifesto of Gualtiero Marchesi’s Nuova cucina italiana serves as a starting point to explore the tension between innovation and normativity. The study calls for future analyses of individual dishes as syncretic texts where meaning, identity, and politics converge.
